Method
Smoothie
- To create the two-toned smoothie look - add 1 to 1½ frozen bananas, 1 cup almond milk, the custard apple/pineapple, and vanilla powder to a blender and blend until smooth. Pour into a bowl or glass.
- In the same blender (no need to rinse) add the remaining frozen banana, almond milk, and the cacao powder, and blend until smooth. Add this mixture to the same bowl or glass and gently swirl together. *If you’re not worried about creating the two-toned look simply blend all the ingredients in a blender until smooth then pour into a bowl or glass.
- Top the bowl with granola, fresh fruit, toasted coconut, and cacao nibs. Enjoy!
Granola
- Preheat your oven to 180C/350F.
- Combine all of the granola ingredients into a large mixing bowl and stir well until combined.
- Spread the mixture onto two paper lined baking trays.
- Place the trays into the oven and bake for 20 minutes, stirring the granola halfway through its baking time.
- Once baked, remove from the oven and set aside to cool.
- Store in an airtight container or jar in the fridge.
- This granola also tastes delicious served with milk of your choice and fresh fruit.
